We have tried many cornbread recipes here at Pinworthy Kitchen- everything from the traditional bread to ones that are pumpkin flavored- yet, this one remains our favorite. It is everything one would would expect in a cornbread and more- wonderfully coarse and dense, containing the perfect flavor, and being crumbly without being too dry.
Cornbread pairs wonderfully with so many different kinds of foods, especially hearty soups. Be sure to keep some cornmeal on hand, and this recipe can be made at a moments notice.
Another wonderful thing about this recipe is how versatile it is. This cornbread freezes and thaws out well. It also bakes well in a pan or as muffins- the choice is up to you.
