This soup just happens to be one of them- it is the perfect combination of ingredients, is hearty and warming, and contains just the right flavors. While it might seem like an unlikely combination of ingredients, we promise that this soup is one you will enjoy.
This recipe makes a lot of soup in that it can provide at least 6-8 adult servings. Don’t need that much soup for dinner? It freezes well although it should be noted that the carrots and celery might be a bit softer once thawed and reheated.
Another wonderful thing about this recipe is that it is fast and easy weeknight dinner. Preparation is quick- the rest of the soup can be prepared in the amount of time it takes to brown the ground beef. After that, it is a simple matter of letting the ingredients simmer on the stove top and garnishing it with parsley when done. We recommend keeping some extra beef and the canned goods on hand- this soup can make for a wonderful spur-of-the-moment meal.
