One of the best things about this recipe is how quick and easy it is to prepare- it is simply a matter of putting the chicken in the slow cooker and then adding in the rest of the ingredients. When the soup is done cooking, shred the chicken and add in some fresh cilantro and lime juice- it is truly that easy!
We’ve tried lots of chicken tortilla soups here at Pinworthy Kitchen, but this remains one of our favorites. It has just the right combination of ingredients and flavors, and it tastes amazing when served with diced avocado and tortilla strips.
This soup freezes and reheats well- because of this, we recommend making a double batch and setting some aside for a future meal.
