What Makes This Pinworthy?

The true star of this dish- and what sets it apart from all other taco pasta salad recipes- is the honey lime vinaigrette. Made with honey, lime, taco seasoning, olive oil, and a couple of other ingredients, it is the perfect combination of flavors and it pairs well with all of the other salad ingredients.

This recipe is very versatile- while it is great as a vegetarian entree, it can also be a tasty side dish. Here at Pinworthy Kitchen, we like to eat ours with ground beef and serve it as a main course.

Another great thing about this recipe is that it is frugal to make and makes many portions. Including the addition of ground beef, this meal should cost about $6 to prepare and makes about six to eight servings. This pasta salad keeps well in the refrigerator- just be sure to serve the avocado on the side so it doesn’t go bad.
